1 主题内容与适用范围
本标准规定了食品用香料分类与编码的一般原则和具体编号。
本标准适用于研制、生产、使用、管理以及一切涉及食品用香料的场合。
2 术语
2.1 香料 aroma
一种能被嗅感嗅出香气或味感尝出香味的物质。香料可以是存在于自然界生物(即动
物、植物包括藻类)体内的,也可以由人工合成(化学合成、生物合成),其中有些品种
在自然界中尚未发现。
2.2 食品用香料 flavour
能够用于调配食品用香精的香料。它包括天然香味物质、天然等同的香味物质和人造
香味物质三类。
2.3 天然香味物质 natural flavouring substances
即天然食品香料,用纯粹物理方法从天然芳香原料中分离得到的物质。
2.4 天然等同的香味物质 natural-identical flavouring substances
即天然等同的食品香料,用合成方法得到或从天然芳香原料经化学过程分离得到的物
质,这些物质与供人类消费的天然产品(不管是否加工过)中仍存在的物质在化学上是相
同的。
2.5 人造香味物质 artificial flavouring substances
即人造食品香料,在供人类消费的天然产品(不管是否加工过)中尚未发现的香味物
质。 
3 编号原则
3.1 采用食品添加剂法规委员会即CCFA(Codex Committee on Food Additives)、食品香
料工业国际组织即IOFI(International Organization of the Flavor Industry)和欧洲
理事会即CE(Council of Europe)等对食品用香料的分类。即把食品香料分为天然、天然等
同和人造香料三类,分别以“N”“I”“A”等字母表示,写在号码前面。
3.2 表 1食品用天然香料编号表,按产品的通用名称,按照中文笔划多寡编排,每一种香
料编一个号码。
3.3 表 2食品用天然等同香料编号表,编号大体上按化合物所含主要官能团(即醇、醚、
酚、醛、缩醛、酮、内酯、酸类、含硫含氮化合物和烃类及其衍生物及其他),再用通用
名称的顺序排列(如甲、乙、丙、丁…)。
3.4 表 3食品用人造香料表,排列基本同表 2.
3.5 有“T”符合为暂时允许使用的品种。表1中所列的品种除极个别外都为允许使用的,
表3中所列品种除极个别外都为暂时允许使用的,表 2中有“T”符合的为暂时允许使用的,
不列的为允许使用的品种。
3.6 香料编号表把编号、香料名称(包括化学名称、俗名、商业名称)、英文名称和美国
香味料和萃取物制造者协会即FEMA(Flavor and Extract Manufacturers' Association)
编号合在一起便于查阅。
3.7 天然香料编号由N001开始；天然成分等同的香料编号由I1001开始,按所含主要官能
团分类,每一类后面都保留着若干空号,便于今后不断补充；人造香料编号由A3001开始。
